Roasted Brussels Sprouts with Grapes and Walnuts


I was at my work desk yesterday when I saw a post about something, geez I really don't know what it was. But I saw this recipe for a healthy good for my diet paleo meal using brussels sprouts. I bought a huge bag of it from walmart. Unfortunately the husband is not a fan of it when I just roasted it with other vegetables. Also, what a coincidence, we have a lot of grapes from costco.

I'm telling you! This is amazing...I love it! I hope I get a text from hubby saying that he likes it too. I read the recipe from Martha Stewart, understood the gist and did my own thing. I'm so bad at following recipes..I don't enjoy measuring. Anyhoo... here it is.


Ingredients
Brussels Sprouts, 
slice it how ever you want it, i chopped it in half
Grapes
Olive Oil
Chopped Walnuts
other recipes are saying it should be whole, 
I bought the chopped because it was on sale and it's still good
Salt
 Pepper
Thyme


Mix it all together in a bowl. Season with salt and pepper base on how you preferred it
to be. I was so tempted to use cayenne pepper but I know my husband doesn't like spicy food.
Preheat oven to 375. Pour everything on your tray and roast.
Roast for 30-35 mins.
Serve.

I just had my share of this goodness for my breakfast. Love it!

Peejay's Fried Rice

I normally use Coconut Oil for my fried rice but this morning I decided to use the same pan that I used for the Thai Basil Chicken and used the left over oil and flavor from that pan. I always do this whenever I am making something that has sauce like adobo or any stir fry.


I love making fried rice.
I feel like it can make a simple breakfast extra special.

Breakfast for my husband this morning was 
shrimp fried rice with turkey sausage and over medium egg.



Fried Rice

Ingredients
Rice, 
leftover rice stored in the refrigerator overnight is perfect for this
Spam,
whenever I use spam, I don't season the fried rice anymore because the spam is already salty
Frozen Mixed Vegetables, 
you can add as little or as many as you like
Frozen Peeled Shrimp,
i usually just add 4 at a time but you can add as many as you like
Coconut oil, Butter or Vegetable Oil
Yellow Onion
Garlic
1 egg, optional

1. Heat your frying pan and add oil when your ready.
Just add enough to saute the onion and garlic.

2. Saute onion first. (I use yellow onion because it has more flavor)

3. Add the garlic and cook until it's brown.

4. Add the shrimp and once it's turning pink, add the spam.

5. Once you see that the spam is turning brown, add the mixed vegetables.

6. Check the green beans from the mixed vegetables. Once it already turned green, add the rice.

7. Keep mixing and stirring the rice because you don't want it to get burned. 

8. Crack the egg and mix it with the rice. The egg will make the rice wet so keep on mixing the rice until it's already dry. When it's dry, it's ready to be served.
The egg will coat the rice and will give you a nice color of brownish rice. Some people use soy sauce to get this color and to season the rice but the saltiness from the spam is enough to give it a subtle flavor. You can find some fried rice recipe that will ask you to scramble your egg separately but I don't add the egg for the egg taste because my husband want's an over easy egg for every breakfast.

Thai Basil Chicken

First post. Since getting married and moving in together with my husband, I've been waking up early to cook for his breakfast and lunch. So I thought, why not make a blog to share whatever I prepare for him for the day.

I always prepare a real meal for his breakfast, his lunch and a sandwich for his snack. We're Filipinos, as expected, my husband thinks that a real meal means having rice and whatever dish of meat.

Today, I made Thai Basil Chicken. Well, this is actually a modified version of Pad Krapow Gai, I didn't really use any thai spices. Husband and I bought the cheapest chicken thigh pack from costco, we got 6 packages with 4 thighs of chicken for each pack for $11 and some change. That's a lot of chicken just for the two of us, so I've been really trying to make a new chicken dish for him.

This pack is really not the best because it has a lot of chicken fat and skin. I usually just throw that part but for this recipe I was able to use it.


Thai Basil Chicken

Ingredients

2 pieces of chicken thigh
2 teaspoons of oyster sauce
1 teaspoon of soy sauce
3/4 teaspoon of sugar
(i started with 1/2 teaspoon and tasted it, 
my husband doesn't really like salty food so I added 1/4 teaspoon)
1/4 teaspoon of cayenne pepper
(i started with 1/8 teaspoon and tasted it, you can add more if you want
a spicy thai basil chicken)
2 cloves of garlic, minced
1 stem of spring onion, separate the white part
red pepper, sliced thinly
fresh basil leaves

2 pinches of salt (optional)
2 pinches of dried basil (optional)


1. Remove the skin and fat from the thigh. 
Slice the fat and skin in smaller pieces. 
Chop the chicken meat in smaller portions.


2. Heat your frying pan. 
When it's ready, put the chicken skin and fat so you can extract the oil. 
Stir it once in a while so it won't burn.


3. Sprinkle 2 pinches of salt on the chicken meat.

4. Prepare the sauce and set aside. 
(I used 2 teaspoons of Oyster sauce, 1 teaspoon of soy sauce, 
3/4 teaspoon sugar, 1/4 teaspoon cayenne pepper)

5. Prepare the garlic, red pepper and spring onions.


6. Once the chicken skin is turning brown, saute the garlic, 
half of the prepared red pepper and the white part of the spring onion.

7. Once the red pepper looks soft, add the chicken meat and stir fry.

8. Add 2 pinches of dried basil while you stir fry the chicken.

9. Add 1 tablespoon of the prepared sauce to the chicken. 
Continue stir-frying.

10. Once the chicken is already cooked, 
add the rest of red pepper and the rest of the sauce. 
Coat the chicken with the sauce.

11. Add the fresh basil leaves. Serve.

Thai Basil Chicken
On the same pan, I made a fried egg.
 I didn't add any oil on the pan or even use salt on the egg.


Husband's lunch. There's white rice underneath this amazing Thai Basil Chicken.
I tasted it and it's really good. I had some of the sauce on the plate so I scraped it using
left over rice.... next dish to prepare is Fried Rice for husband's breakfast!

Kusina. Cocina. Kitchen.

Kusina ni Misis means A Wife's Kitchen in english.

My husband and I just recently moved in to a studio apartment together. We decided to rent a smaller space because we wanted to save for a house. I honestly didn't like the idea of a studio but we found an apartment with a separate kitchen. I love it because of the kitchen space and he loves it because of the price, win-win for us.

Our kitchen is my own version of a man's cave. I usually wake up at 3am to start preparing for my husband's breakfast, lunch, snack and sometimes smoothie. I don't have to wake up at three but I've already calculated it- I need at most 2 hours to prepare for everything including cleaning up the kitchen.

I prepare for work at 6am, so whenever I am done with everything I crawl to bed and snuggle with him. I don't immediately start cooking at 3am, I take my time and enjoy my me time. I like it and I love how it's already becoming a routine. I'm getting used to this and I am honestly loving my new role-- a wife.

We didn't instantly moved in together after we got married. We traveled and took our time looking for a good place to call our own. For months I kept on imagining my new role because even though we've already been traveling together for 7 years now, moving in together is definitely different.

I don't eat when I'm tired or even when I'm not in the mood. My new role now is to think about my husband and make sure that he is well fed, the kitchen is clean, we have clean clothes and the apartment is clean. In fairness to my amazing husband, he cleans the apartment. And the kitchen is mine.

This is not my first blog. I have Light it Up. I have been writing about my personal journey as a Christian during the lowest period of my life. It helped me stay motivated and reflect. I am in an amazing chapter of my life. However, it is still challenging. I'm looking forward to start this new blog to share my exciting journey as a wife.

I am not only aiming to share recipes here but also my reflection, stories and everything else that I can think of that is possible in my woman cave, wife's cave... the kusina in tagalog. cocina in spanish. kitchen in english.
